The rain!

Hey everyone, glad to know we finally got the rain! YEAH! Oh man, it just cools off the hot weather. Wow, it does make a big difference! I think one of my customer who is getting married this weekend, is probably glad to know that the weather finally cool off. What a lucky person she is. Anyway, for those of you are checking back to my blog, please add any comments you like to say or whatever you want to talk about. It can be diet, exercise, or healthwise. Whatever is on your mind- please ask Ben about it. He is a certified personal trainer and would like to answer your questions you would like to ask.
Yesterday was a sad day for me. I found out one of the journalist I know who did an article for me five years ago has passed away. Her name is Benita Newton. She was a wonderful girl who had a very sweet spirit. She was very bright and smart. I remembered she wanted me to train her before it got too late. She did say that she wanted to come back to Tuscaloosa someday but didn't know when. When the article came out in the Tuscaloosa News- I was shocked to learned that she passed away where she was working at Virginia. I was hoping she would return back to Tuscaloosa, but now it has turned to a different direction. I will miss her and will always remembered what she wrote for my business in the paper. I still have it hanging in my office and am proud of it. I have appreiciate her work for me. God rest her soul. She will always be a winner no matter what.
You know there have been many times when you need to tell someone you know that you are living with- like your spouse, children, or parents, be sure you say " I love you!" You just never know what is going to happen in your life today or tomorrow. Remember tell your spouse, children or parents " I love you!" It is still true today. There is a book called "Let's Roll!" by Lisa Beamer. Her husband was one of the American passenger in the American Airlines durning the 9/11 plane crash. He told his wife "I love you!" and then he said "Let's Roll!" I will never forget that. I highly recommend you to read that book. Very moving and touching. Have a good rainy night to all of you.

Chicken Enchiladas recipe

Hey folks this sounds great! I am going to try this. Remember you would want a whole wheat burrito instead of white flour- I will write an article later on this week about white death, k? Thanks.
Pre- heat the oven to 450 degrees
1. put the chicken ( 2 and 1/2 cups ) in a small bowl and toss with 1 Tsp of lime juice or lemon, 1/4 cup of salsa, and salt ( here you need sea salt) and pepper to taste
2. get the tortillias ( about four or six), here is the rolling part
Place a quarter of the chicken mixture on the lower thrid of the tortillias and roll it up into a cylinder from the bottom up, tucking in the sides as you go so that no chicken escapes from the ends. Place the filled tortilla in a square pan ( 8x8) baking dish with a seam facing down. Repeat
3. Combine the remaining 1 cup of salsa with 1 Tsp water, the remaining lime juice (1 tsp) , the oinion (1/2 cup of small onion- chopped and diced) and one jalapenos ( diced) . Arrange the slices of chesse ( fat free) over the tortillias and pour the salsa mixture over the top. Bake until the cheese is melt. Then sprinkle with cilantro and serve. YUM!!!!!

how much does it go organic?

Does this good to you? No pesticides, no hormones, and no antibiotics? Sounds good, but what does it mean go organic for a budget? You can check out the grocery stores in your local area. My area has Publix, Target, Wal Mart, and Winn Dixie. These stores do have some oganic cerals, tomato sauces, and the like. I am not convince the vegetables and fruit section in all the stores are organic, but it could be. Mostly, they are in the farmer's market where they grow organic garden is the best bet. Now, if you are looking for free range chicken, and meat and it is harder to find in the smaller towns but mostly in good grocery store such as Publix, or Target. They have some selection, but not all. You will notice that the meat you buy can be very tasty and rich in flavor. To make a better results how to save money on organic foods. I sugguest youlook at the ad in the paper every week ( Wednesday's paper) and find out what is on sale. Sometimes it is not on sale and sure most of the organic foods from Wild Oats store and Whole foods store are much higher. But the question is, is it worth it? One thing that I noticed is that lot of organic cereals are much smaller than the sugar refinery cereals.
The verdict of this, usually the store such as whole food store or Manna Grocery are much higher- probably around 50-60 bucks higher than the regular food grocery chain store. Watch out and you can buy on some things that will not hurt your budget. Keep looking in the paper and see what is on sale and you will be much better off than losing your money from your pocket.
